Pumpkin Spice Honey Oatmeal Muffins
















Ingredients:


3/4 cup old fashioned oats


3/4 cup whole wheat flour


3/4 cup all-purpose flour


2 tsp baking powder


1/2 tsp salt

1/2 tsp pumpkin pie spice


1/4 tsp baking soda


2 eggs, slightly beaten


1/3 cup honey (raw if possible)


1/2 cup nonf
at milk


1/4 cup veggie oil

Instructions:



Preheat oven to 375 degrees. Combine oats, flours, baking powder, salt, pumpkin pie spice, and baking soda. mix. In a separate bowl beat eggs, honey, milk, and veggie oil. Pour egg mixture into the dry ingredients. Mix until moistened. Spray a muffin pan with crisco spray and add batter to the pan. Bake for 20 mins or until toothpick comes out clean.

What a Messy Mess!!!!

But it's awesome to watch my youngest little one eat by himself with a spoon for the first time :) Ty is such a determined little guy. He weaned himself off the bottle very early, and he wants to eat everything by himself. So, i decided to give it a go at 14 months ...... he caught on very quickly and now feeds himself EVERYTHING with only minor help from mom and dad. You rock Tyster!

Spinach Mushroom Saute

this is an easy peasy healthy side dish that my family LOVES!!!

1 tbsp extra virgin olive oil
2 bags of spinach, chopped
2 containers of mushrooms, chopped
1/4 cup freshly grated parmesan cheese
salt and pepper to taste

Heat olive oil over medium heat in a pot. Add spinach and mushroom and stir occasionally. While cooking, the vegetables will GREATLY REDUCE. You may need to put only a little in at a time depending on how big your pot is. When the vegetables are tender add the parmesan cheese and stir until melted. Add salt and pepper. Serves 4.

Chicken Artichoke Orzo

Ingredients:

2 chicken breasts
8 oz. dry orzo pasta
1 can artichoke hearts, chopped
2 roma tomatoes, diced
1 can olives, chopped
1 tbsp extra virgin olive oil
1 clove garlic, minced
1/2 cup parmesan cheese, freshly grated
1/2 tsp poultry seasoning
salt and pepper to taste
curley parsely, for garnish


Instructions:

Bring a pot of water to a boil. Add chicken and poultry seasoning. Cook until done. In the meantime, bring another pot of water to a boil and cook orzo pasta according to package directions for al dente pasta. Heat olive oil in a large saute pan, and saute garlic until light brown. Shred the chicken and add to the saute pan. Drain orzo pasta and add to the saute pan. Add the chopped veggies and season with salt and pepper. Add the freshly grated parmesan cheese. Stir and viola! xoxo.

Levi's Football Camp

He learned a bunch of new skills to take with him to Pop Warner Football this year! Hopefully he will be able to earn his spot back as middle linebacker! GOOOO Levi!!!!!

After the awesome 4th of july happenings, grandma wanted all of us to go to the zoo!!!! wooo hooo. The zoo is one of Landon's favorite places. He loves animals, books about animals, movies about animals, anything animal related basically. He frequently asks me to go to Africa to see the zebras. lol.
